OK - its time to get summer going with some quick and easy burgers. I was walking the pooch at Binning Wood (http://www.binningwood.co.uk/) near North Berwick today and felt inspired by the raft of colour and smells (the wood not the pooch) to hoof together a quick burger recipe for the old bloke's tea. Friday night is usually as flat as a pancake so a tasty burger should lift the spirits - if not a bottle of fruity red will and if all else fails its going to have to be a cheats rhubarb crumble (tomorrows recipe!).Back to the burgers - there's enough for 4 blokey size burgers or 6 smaller size if you're feeling a bit portly.
Ingredients
500g of pork mince ( I go to Andersons in East Linton, shop local, rock on).
3 spring onions (on offer in Aldi today)
2 heaped tablespoons of breadcrumbs or do what I did and use pinhead oatmeal (och aye!)
1 egg yolk (through the white into tomorrows omelette's if you want to be economical)
1 small eating apple cored and grated (be tough and leave the skin on)
2 tablespoons of herbs (brownie points for me as I planted a few garden herbs a few months ago, so I used some fresh sage, say 4 leaves chopped and some parsley, but use what you have or whats on offer in the shops, like thyme, chives etc).
1 tablespoon of marmite (trust me on this one!)
lots of fresh pepper and 1/2 teaspoon of salt
Chuck the lot into a bowl and mix thoroughly, then separate out into the 4/6 burgers on a piece of baking parchment on a baking tray. Cover with another sheet of paper and chill in the fridge until you're ready to rock.

Cook them whichever way is easiest, I'm barbecue-ing tonight so I'll brush them with a bit of olive oil first before I put them on the grill. Otherwise it tends to look like summer roadkill and will upset small children as you pry burnt offerring off the grill. I'm sure that if you can log on to this then you can manage to cook them to perfection, whichever heat sensation you decide to use.
I'm having mine with some home made potato salad (spuds, sour - cream, mayo, mint, parsley, chives) and some cous cous made with tomato juice and a red pepper (it's a firm favourite!)
Sleep and eat well!!
